Colosseum, Roman Forum and Palatine Hill. This took us 9 hours.
See Trevi Fountain & Colesseum at night.
I have a feeling you are trying to do too much.

Do you have your tickets for the Galleria Borghese? Pre-purchase is mandatory and you’ll need to be on the 9 am tour (ends at 11) in order to make your Colosseum time of 13:15. I doubt you have time for the crypt if you are to get from the galleria to the Colosseo and also have time to rest a bit, have lunch, rehydrate.

We spent 4 hours touring the Colosseo, Foro Romano, and Palatino. By the end of that, you will be exhausted. Even if you are not pooped by then, you really do not have time for the Appian Way (bit of a jaunt) but you might have time for the Baths of Caracalla.

Don’t set your schedule too tight. You will become frustrated. Plan some time for eating, relaxing and you will enjoy it more.

Ooof! All of these are so interesting but you're simply not going to be able to do them all in one day. The Colosseum, Roman Forum and Palatine Hill Tour alone will be wearing, and Villa Borghese (the gardens) covers a lot of ground so with just these + Galleria Borghese, you've already got a long day on your feet. I'd consider removing the Baths and Appian as I can't see you having enough steam left to fully explore and appreciate them.

We're stout walkers/hikers and have done some long days in Rome (e.g hiking the Appia from Casal Rotundo back into the city, hitting Circus of Maxentius, San Sebastiano catacombs, Capo di Bove, Domine Quo Vadis, Baths of Caracalla, San Giovanni in Laterano, Santo Stefano Rotondo and San Clemente) and I know we'd struggle to manage your itinerary, not that I'd even try to.

It's hard to gauze the time it takes to see the sites so your input is really valuable. If we spend less time than expected we can alway add on. Any ONE thing you think we are missing? There's really nothing we don't like doing. We are fit and energetic but also realize we need to eat once in a while.

Yes. You DO need to eat. At least twice daily. 😉

There's more to be missed in Rome than what one can fit into a stay much longer than your 2.5 days so I wouldn't add to the pile (or to the wear on your shoes). At most, a stop into an interesting church or two along the way from points A to B is possible and recommended unless you're completely knackered. Trastevere? Santa Maria in Trastevere is very old and has some wonderful mosaics.

At the west end of Villa Borghese are the Pincio gardens and a nice overlook of Piazza del Popolo (Terrazza del Popolo on google maps). Santa Maria del Popolo, on the north side of the piazza, is another lovely church showcasing a Bernini reconstruction and some very valuable works of art.

We just returned from Italy this past weekend and had about the same amount of time in Rome you will have. Our first day after our flight was very similar to what you have planned. We found though that we wanted to go back and see the Trevi Fountain and the Piazza Navona at night because the atmosphere is much different. I will agree with others and say that the Colosseum/Roman Forum and Palatine Hill will take hours to see. We spent around 5 hours between these sites and still did not see it all.

Rome is a fun City to just wander and people watch. We tried to plan time to just sit down, grab a glass of wine and watch the world go by.
