I'm looking to stay in Ortesei for 3 nights. Want to do some great hiking. Does anybody have information on a guide for hire?

You don't really need a guide. The trails are well-marked and well-traveled. You can pick up a map and some hiking suggestions at the tourist office.

I used the ALPINEHIKERS.com - they can help you with self-guided routes. You can also get a great book on the Dolomites from Ciceron (sp?) Hiking books.
