Any food that is (a) traditional Umbrian flat bread cooked in ash (b) that you stuff with prosciutto, cheese and herbs at the table and (c) that – this is key – is served at a truck stop definitively makes Gubbio a must do for me. But, I can't find this place anywhere in The Google. It is in this Bastianich video http://www.youtube.com/watch?v=95xa0GhWL34 It is at the 10:55 mark, so you can slide forward to skip over the rest, although if you do then you will miss several alluring scenes in Gubbio. Anyway, do you know this truck stop and if so where is it? Thanks.
