We stayed in Taormina, Catania and Siracusa. Siracusa was our favorite. Our B&B was Acropoli (www.siracusa-hotels.it). It was great.
An elegant B&B in Ortigia/Siracusa is Corte degli Angeli. Stayed there in 2006 and loved it, and the man who owns it. www.lacortedegliangeli.com
I highly recommend Palazzo Giovanni near Acireale. We were there summer of 2007 and I can see that recent tripadvisor reviewers feel the same way that we did of this lovely, family run B&B. Silvio & Alessandra are wonderful hosts and helped us to plan our day trips to Taormina, Mt. Etna and Siracusa. I'm glad now that we did NOT stay in Taormina - though it was a lovely setting it was much too "honeymoon touristy" for our family. We liked the small town of Stazzo (the town that Palazzo Giovanni is actually located) and ate at the local restaurants there 2 different nights. Breakfast and late afternoon drinks on the top of the building with the views of Mt Etna on one side and the sea on the other were a nice side benefit.
