Gluten free food is available everywhere in stores and pharmacies. Lots of Italians are coeliacs.
Many travelers say that Italy is the easiest country in Europe to eat gluten-free (senza glutine). Your waiter will be able to recommend items or will find someone else on staff who can. The menu posted outside may tell you if they have gluten-free choices, but if it doesn't, you will find choices by asking.
I travel with friends for a couple of weeks every summer and we have never had a problem - there are gluten-free pizzas!
Just an FYI - actual Italian food does not equal pasta and pizza, especially in those regions. Pasta is but one possible course in a meal and can be easily skipped. It helps to have a card written in Italian to note that you are gluten intolerant so you can inform the waiter. Italians, and most Europeans in general, are well aware of gluten intolerance and should be able to accommodate you.
We just returned from Rome and Venice and found that some restaurants do serve gluten free pasta. It is a penne pasta and I'm not sure whether it was made of corn, rice, or something else. You order whatever pasta and sauce you want from the menu and tell them you want it senza glutine. Of course, before you sit down you do need to be sure that the particular restaurant does serve gluten free pasta. Some restaurants have signs that say they serve gluten free pasta but others do not and they still might serve it so always best to ask. If you want pasta, you don't have to deny yourself. Good luck!
If you happen to be preparing any of your own meals, or just want some snacks to carry, you find the biggest displays of gluten free items in pharmacies! I had no problems finding gluten free, dairy-free, meat-free food everywhere I went in Italy! My favorite pizza was on the Island of Stromboli, of all places!
