The Italian diet has plenty of veggies, meat & risotto that someone with celiac can eat. There are translation cards available at this sight: http://www.celiactravel.com/gluten-free-cards/21-italian.html

Print them out and hand them to the waiter to make sure the food is prepared properly.

There are some restaurants that serve gluten free pasta & pizza but you usually need to call a day in advance to request the items.

In Rome:
*Il Tulipano Nero, Via Roma Libera, 15 in Trastevere serves gluten free pizza, calzone, and pastas. Closed on Mondays. Tel. 06 581 8309
*
