There are sections for gluten-free food in pharmacies and grocery stores. many restaurants have gluten-free meals, or can recommend gluten-free options from the regular menu. "Senza gluten" = gluten-free. I sometimes travel with a friend who must eat gluten-free and it's never been a problem in Italy.

You can buy the book The Gluten Free Guide to Italy, but you should be fine without it. My wife has Celiacs Disease so GF is a must for us. We brought the book for our first trip to Italy and soon realized most all places can accommodate and do not cross contaminate. The correct term is actually Senza Glutine which Italians will understand a little better than Senza Gluten. With regards to Gelato, typically places that make it in house it is GF, those that buy it premade typically do not guarantee if it GF as some of the commercially made gelatos use flour as a thickener.
