I''m trying to figure out if trains run directly from FCO to Florence, or will I need to head to Rome's Termini from the airport in order to catch the train.

I see two one at 11:08 and 15:08 direct to Florence otherwise change in Termini

our flight arrives at 11:15, so it looks like we may have to catch one out of the Termini.

Since now all high speed trains to Florence stop also at Roma Tiburtina after departing from Termini, it is faster and cheaper to intercept that train at Tiburtina using one of the many Regionali trains departing from the airport and going to Tiburtina.
When you use the Trenitalia website enter the station names in Italian:
FIUMICINO AEROPORTO
FIRENZE SANTA MARIA NOVELLA (Florence main station)
The napes will pop up as you start to type them.

You don't have to, you could also take a train out of Rome Tiburtina Station. You don't have to pay trenitalia's high prices, either: there is another option.
There are 2 airport trains leaving from FCO, the 14 € Leonardo Express that goes to Termini and the 8 € FL1 that calls at Tiburtina.
Two railway companies run high speed trains from both Termini and Tiburtina stations to Florence: www.trenitalia.com/tcom-en and its private competitor www.italotreno.it/en
The latter has been selling discounted tickets cheaper than trenitalia's for months.
Just did the FCC-Tiburtina-Florence trains a few days ago. The Tiburtina station is much less crowded and very easy to navigate. There's a café to purchase food for your trip as well.
