We are hoping to spend our last 2 days in Gallarate (close to the airport) and on one of those days go to Stresa; however, our lodging is about a 26 min. walk to the train station and I read taxis are not always there and sometimes contacting them might be an issue, (That information came from a google search) I am hopeful someone might be able to help with this issue! One of us has some mobility issues. Thanks in advance!

or ask your hotel to summon one for you.
To get back to the hotel I remember there were always taxicabs at the station's taxi stand.
There are also city buses but few lines, so you need to share your hotel name to assist you better at checking if there is a bus that comes near your hotel.

So, regarding the taxi, I would first ask the hotel where you are staying to call it for you because there could be problems with the language if you don't speak Italian very well and above all they could have a trusted driver otherwise, as Roberto wrote, you have the number which is Radio Taxi in Gallarate and you can book it directly.
Another aspect is if your flight is early in the morning on the day of departure, you must necessarily call the taxi the evening before because for trips made between four and seven in the morning the taxi must be booked the evening before.
Then there is a last aspect that is no less important: the fact that you have a traveler with reduced mobility since you want to go from Gallarate to Stresa in the same day. It's not a direct trip you have to change trains.
So there is an Italian railway network service called Sala Blu. This service provides assistance to people with disabilities or in any case with reduced mobility, but it must be booked in advance and asked if it actually covers the stations, for example Stresa.
Both Stresa and Gallarate stations are included in the Sala Blu programme, so it is possible to book it for those stations. Below I send you the official links.

Gallarate to Stresa (and back) requires no train changes, unless there are unforeseen interruptions for railroad work which require bus transfers.
Giangilberto must have thought of some other town.
