What can I expect when I show up at a TIM retail location to pick up the SIM? Will they just hand it to me, or will they install/activate?

I didn’t even know you could prepurchase it ahead of time. Although I don’t see the benefit to do so since you still need to go to a store to get it. I’ve always used to buy it on the spot at the store when I used to do so (now I don’t since I have T-Mobile Magenta, which works overseas at no extra cost).
When you go to the store you can ask them to install for you. it is very easy to do.
Followup question - when I purchased the SIM online, I was given a code to provide to the worker at the TIM store. I've read online that not all TIM locations know how to deal with a pre-purchase like this.
Will the TIM store at FCO (which may be a reseller) know how to handle this? Or should I visit the TIM store at Roma Termini?

I would go to the one at Termini .
That way you can go back there easily if you have any problems with it.
You’ll need your passport, as a copy is taken when you buy an Italian sim.
Go here at the Termini station. It’s a TIM store. The one at FCO is a third party authorized dealer.
