Gelato and the Da Vinci museums

We will be in florence in June traveling with 3 teens (13,13 and 17). So after all the churches and art museums (which they will enjoy, but see many) we thought we should plan a few things for them; so 2 questions, any recommendation on which da Vinci museum we should choose? They seem really similar. Hands on things sound interesting, daughter going to college for engineering and dad is an engineer, so this seems like a good choice, but not sure which one. And, thinking of doing a "making gelato class". I have seen some but they seem to be only an hour, can you make gelato in an hour? if anyone has done one of these and can share if it is "worth it" or has a recommendation of a place to do this we would appreciate it.

We did not go to either da Vinci museum, but with an engineer and one studying to be an engineer, I highly recommend going to the Galileo Museum. We loved it and neither of us has an engineering background.
We ate gelato but didn’t take a class. You will hear from some who have and seemed to enjoy them.
