French Riviera and Liguria insights/tips in June?

Hi All,
My husband and I have 1 week (without kids!) in Mid June to explore from about Portofino to Nice (he has a conference in Nice at the end). We've both been to, and love, Cinque Terre. I have been to Southern France as well as a student 20 years ago. We'd love to do something exciting- an adventure (biking or sailing?) or a few day course (cooking?) or maybe just staying at rare gem of a hotel that blows one away. We could also meander inland. Most of all, it's the experiences and places, not necessarily checking sights off a list, which we are looking for.

I'd love any thoughts from all you experienced travelers!
Thank you!

I just googled "boutique hotels Saint Jean Cap Ferrat" and came up with "La Voile d'Or" which is also in the Tablet Hotel group: https://preferredhotelgroup.com/preferred-boutique/destinations/france/saint-jean-cap-ferrat/la-voile-dor/accommodations
I have never stayed there, but am somewhat familiar with Saint Jean Cap Ferrat, a very exclusive area just outside Nice. Is this along the lines of what you're looking for? If you enjoy visiting villas and gardens, you will probably enjoy visiting Villa Ephrussi Rothschild, in Saint Jean just oustide Nice. I visited it as a day trip from Nice last summer and spent 6 hours there with lunch on the outdoor terrace of their restaurant. It was beautiful: almost 360 degree views of the Mediterranean from many of the rooms.
Be sure to arrive in Portofino by boat/ferry for a great view of the town. I spent a week in Liguria a couple of summers ago with Rapallo as a base, but would not recommend my hotel as a "rare gem".
