We used Food Tours in Parma with Laura. She's fabulous. Takes you to some wonderful small family run places. We had had a tour of cheese, prosciutto, balsamic vinegar, wine and lunch. Absolutely wonderful. Based out of Parma you can read reviews on Trip Advisor

We just returned from the area and did a tour out of Bologna with Italian Days (www.italiandays.it) that was fabulous. It seemed a little pricey when booking (150 euro/person), but it was worth every penny. The tour we took went to a parma cheese factory, a balsamic vinegar producer and a procuitto factory. Tastings and wine at each stop. Then on to lunch at a fabulous restaurant. The cost includes transportation. The guide is knowledgeable and fun.
