We will be in Assisi a week and want to turn in our rental car and from there fly to Paris. What town near Assisi would be best to do that? I am assuming based on past Assisi trips that flying from there wouldn't be possible.

There is an airport in nearby Perugia and others more distant to the northeast. None appear to be able to get you to Paris . The closest nearby airport that can is the Amerigo Vespucci airport in Florence. To get there on public transportation, you will need to take the bus from Assisi down to the train station, take the train from Assisi to Florence and then take the #62 bus to the airport from the Florence train station. Two airlines that can fly you there are Alitalia and Air France. I don't see the discount airlines making this route from Florence. If you want the really cheap airlines, you will need to get to Venice-Marco Polo, Milan-Malpena, Pisa, Rome-FCO or Ciampino outside of Rome.

Assisi is actually about equidistant from the Florence airport and Rome's Ciampino airport. The advantage of Ciampino is that you can fly Easyjet from there to Paris-Orly.
