Florence to Rome (wineries in winter)

Hi all. Anybody have recommendations on wineries down Cihanti hwy in Feburary?
We have a 13 day trip booked for MIDDLE FEBURARY. Were starting in Florence and Ending in Naples. Does anyone have any information on *wineries* that would be open this time of year? We have transportation and wanted to "do winery things" down the Cihanti Highway on our way south. I know it is offseason, but thought id throw a line and see if any of you have had any experience with this time of year? Any information at all would be appreciated (websites, tour information, favorites?, ect.)

On a side note*
were trying to plan an overnight (or 2) stay somewhere in between Florence and Rome (on our way down to Amalfi Coast). Considering Siena or Montepulciano or Montalcino or ???... Anybody have any suggestions/recommendations,
