I would like to have 5 different and interesting places to eat a great lunch while in Florence.
We luckily happened into The Gucci Cafe and were very happy with it. They were mostly booked with local business people, but we snagged a two-top. I would recommend making a reservation.
sounds like you want sit down places, but I'd still recommend going to Central market and think about assembling a picnic lunch, they will make sandwiches for you, and we got some of the most beautiful bing cherries, strawberries, grapes and cherry tomatoes I have ever had
I had one of the famous pork sandwiches at the Central Market - there was even some limited seating near the booth that sold the sandwiches. They are great and I was told that this market if known for the pork sandwiches.
It is great fun to look around the market and you can even get some fruit or Gelato for dessert after your sandwich.
I would definitely recommend Trattoria Mario near the Central Market and the new “food court” on the upper floor of the Central Market. These would be good for a shorter lunch. For a more leisurely lunch, Trattoria Katti on Via Faenza is a good option, as it’s much less crowded at lunch than at dinner, and in Oltrarno, La Casalinga would be a good choice. If you could clarify what type of lunch options you’re looking for, that would make it easier to offer other suggestions. For example, do you plan to make lunch your main meal for the day or are you looking for lighter lunch options where you can get in and out in a shorter amount of time?

All'antico vinaio, behind Palazzo Vecchio. It is just a sandwich place, no place to sit down other then the street, but it is a fun and the food is terrific. It gets a #2 rating on trip advisor, not deserved in my mind unless you are just ranking sandwich places and not restaurants. It is worth it for an excellent sandwich and a glass of vino.

You did not ask for dinner recommendations but I saw that Roberto listed Trattoria Sostanza ( maybe they do lunch as well). We were recently in Florence and loved this restaurant--reservations are essential. The butter chicken was wonderful and the meringue dessert with tiny berries is not to be missed. Portions are large and we shared a pasta dish as a starter. Tables are shared and the atmosphere is unique.

Sono d'accordo, Roberto, with your suggestions for il Contadino and il Vinaino on Via Palazzulo. I have been to Il Contadino for lunch and dinner every time I visit. Excellent food at VERY reasonable prices. Il Vinaino only once but will go again when I visit Firenze next month.
I feel the best way to find a restaurant with good food and reasonable pricing is to watch where workers on their lunch break go. That was how I came upon il Contadino.

I highly recommend Sasso di Dante, a small restaurant almost behind the Duomo. There is a juice bar just in front of it. Delicious food and a friendly owner.
