Wondering people’s experiences with Labor Day in Florence. It will be our last day there and I am assuming most things are closed, curious what local activities may be going on. Will there be street vendors? Also wanted to double check, when I was researching, I came across Notte Bianca the night before Labor Day, which sounded super fun, but it looks like they do not celebrate that anymore?

I was in Florence on May 1 in 2017. A lot may have changed since then, but my notes showed that I visited the Duomo, Baptistry, and Museo de Opera dell' Duomo (a don't miss) as the main attraction that day. I also visited Basilica of Santa Maria Novella and the very small Palazzo Medici Riccardi. My notes said San Marco Museum would be open, although I visited on another day. You have to check these out individually. I was wary of not having enough to do initially as I was planning, but a few emails and web searches were reassuring. I had no trouble finding restaurants open.
I just started to run through the websites or official ticketing websites for the bigger of Florence's museums and here's what i'm seeing for May 1 (which is a Thursday this year):
Uffizi: they only list closures on Mondays, 1 January and 25 December

Museo San Marco: b-ticket shows tickets for May 1 as purchasable.
Accademia: only lists closures on Mondays, January 1 and December 25

Bargello: only lists closures on Tuesdays, 2nd and 4th Sundays on the month, Dec. 25 and Jan 1.

So, none of the above state that they're closed on May 1. That's just a start! Run through the calendars on the official b-ticket website to see if May 1 shows as purchasable for the museums it handles; looks to me like you'll have plenty to choose from! I would pounce on any you really want to see as Florence promises to be especially busy on this holiday.

Does anyone know if there are any festivals/events to celebrate Labor Day in Florence. I found the Throwing of the Flags, anything else?
