I have a very early morning flight out of Florence and decided I'd drive to Florence the day prior, drop off my rental car, and spend the night at a hotel with an easy access to the airport. Would appreciate advice about this plan and suggestion for a hotel.

We've always just stayed anywhere in Florence and arranged for a taxi in the morning. The airport is very close.

If you don’t need to stay in the city center because you have already visited Florence and you don’t care to stay downtown, you can return the car at the airport and stay at a hotel nearby. That is what I do as I have seen enough of Florence.
I usually drop off my bags first at the hotel, then drive to the airport to return the car, and then take the tramway trolley back to my hotel.

Both are walking distance from the T2 tramway stop. You could potentially visit downtown with the same tramway from the same hotels, if you want.
Both hotels have a restaurant (not the cheapest but the food is good). While at the Hilton Garden Inn I’ve also eaten at this pizzeria nearby. Not bad.

If you prefer to stay in the city center, you can do that too, since the airport is only 20 min taxi ride from the city center, so it wouldn’t be more than 10-15 min extra to stay in the city center.
