Florence: day trip and/or cooking class

My husband and I are ending our three week Italy vacation with 3.5 days in Florence. We have discussed a cooking class and a day trip somewhere in Tuscany. I'm a bit overwhelmed on both and appreciate any suggestions/direction. Thank you!

If you can provide a bit more information we could provide better suggestions. Some cooking classes are almost all day affairs starting with market shopping, some are shorter. How much time do you want to devote? For day trips from Florence you have tons of great choices! What are your interests? art & architecture? churches? museums? wine tastings? lots of walking vs relaxing? Will you take the train or travel by car? Within some clearer parameters, I'm sure many folks will have good input.
Edit: also, what Tuscan towns have you visited before?

We are focusing on food and wine. If we took a day trip out of Florence, we would only want a half day cooking experience in Florence. If both could be combined, we’d definitely be up for that. We are traveling by train. Oh, and this is our first trip to Italy. :-)
