My husband and I will be in Florence for 3 nights and thought it would be fun to take a cooking class. Any recommendations?
My fluffy hubby and I both love to cook. We booked a wine tour thing with a cooking class on Monday when the museums are closed. [Accidental Tourist][1]

"Florencetown" has great classes and tours. However, the cooking class I took in March was about 5 hours....but so fun and worthwhile! check out their site for options. They even have a wine tour on horseback which I am dying to try next time!
We saw this at the Mercato Centrale: http://www.cucinaldm.com/en/
Never tried it so cannot comment.
I took the pizza making class from Florencetown last month. They have two - one that's right in Florence, and another that was a 20 minute or so ride outside of the city (and they handle the transportation). I took the latter and it was a lot of fun. The location was lovely and the instructor was a professional chef. You make your own pizza and the instructor demonstrates gelato making and you get to eat both :) Also, there's plenty of wine to enjoy, too. I definitely recommend it.
We just got back from a RS tour (Venice, Florence, Rome) and took a cooking class at the Tavola Cooking School in Florence with the group. Excellent guys and good food. The school is very near the Ponte Vecchio.
