Can you fly from Florence to Interlaken?

No....the airport at Interlaken is a military one. Bern would probably be the closest. But, for all the time and hassle getting to/from airports, security, etc, you might as well take a train from Florence....around 5 1/2 to 7 1/2 hours, depending on which one you catch.
