I have one day off cruise ship. Which tour would you recommend - Florence and Pisa or Cinque Terre?

Livorno, Italy from 7:00 am to 7:00 pm.
Having seen all of your options - I would definitely skip Pisa unless you need to go there. Too many tourists and not much else after viewing the tower for 10 minutes. Florence is amazing as is Cinque Terre (if the weather cooperates).
I have no problem not going to Pisa. Now it's a toss up between the other two if they are both equally amazing.

I haven't checked, but travel time from Livorno to the Cinque Terre will likely be shorter than to Florence, which will provide more time for sightseeing. Both places are definitely worthwhile so you'll have to weigh the pros & cons, depending on what you most want to see.
You may get some good information by having a look at Rick's Mediterranean Cruise Ports guidebook. Check larger bookstores in your area to see if they have a copy (or you can download the Kindle version for $15).
Unfortunately, Mediterranean Cruise Ports doesn't include Rick's chapter of practical info on the Cinque Terre, which is in the Italy book or sold as a separate Snapshot edition. From Livorno to Florence, direct regional trains take 1.5 hours each way. Most train departures from Livorno Centrale station to Vernazza take 2 hours each way with one connection. There are a few direct services to/from Monterosso, but not necessarily at the time you'd be traveling. See also How to Look Up Train Schedules Online.
If you like art and history, I would go to Florence. If not, the Cinque Terre is a beautiful place to visit. I would definitely skip Pisa.
Lucca is also nice and close by.
I'm a Florentine.. Florence and Pisa have been fighting each other since the Middle Ages so I have nothing good to say about Pisa.
