When traveling Palermo--Munich--Vancouver, BC, will I have to go through customs in Munich? Is 1 hour 55 minutes enough time in Munich for the connections? Thank you!

You will go thru customs in Canada-
You will exit Schengen in Munich ( passport control)
Is this all one ticket? Will your luggage be checked thru to Canada?

As Christine noted, you will go through Passport Control in Munich. You will do both Immigration and Customs on arrival in Canada. If your flights are both on the same ticket, and your first flight is on time, then the connection time is fine.
If your flights are on separate tickets, but you don't have checked luggage, and you already have the boarding pass for your second flight, then you should be OK.
If you are booked on separate tickets but have checked luggage, then you had better pray that your first flight arrives early, because you would have to exit the secure area, collect your bags, check them into your second flight, get your second boarding pass, go through security, and go through Passport Control to get to your gate before it closes.
