Five days in Sardinia honeymoon with toddler

We are taking a brief trip to Sardinia on our honeymoon with our 1 year old and my Mom next June. We will be renting a house/villa/apartment and staying in one location. We know there is no way we will be doing any major sightseeing with a toddler. We are looking for a small town with good dining that has beautiful beaches/scenery. Most days being spent at the beach and evenings we will likely leave the little one home with Mom and have some dinners on our own. We don't like the big tourist/commercial areas. My husband and I would like to be able to do a little sightseeing (castles being high on the list) alone one day. The top priority of the area though being gorgeous beaches and not commercialized. Suggestions? We will be flying in from Venice and renting a car. As mentioned we will primarily be staying in one area due to having a small child with us.

Ummm, may I respectfully and politely suggest you leave the toddler home with Mom, and you and your new hubbie take a honeymoon alone? Then take Mom and Junior somewhere special when you get home.

No we are getting married in Florence the week prior so they will already be there with us. I don't feel comfortable sending anyone on a 15 hour flight home with a 1 year old. Plus it's both our 2nd weddings and we are older parents, we don't mind that we will have her with us. We've also had the opportunity to travel a lot before kids so having the alone time isn't as important to us. We will be spending a few nights alone in Venice while she stays with family before heading to Sardinia.

To me the best part of Sardinia is the northern side, from the costa smeralda to Alghero.
I usually stay in Santa Teresa di Gallura or nearby Capo Testa. It's very convenient for boat excursions to the Maddalena Archipelago and 45 min to beautiful Bonifacio in Corsica. Castelsardo is a beautiful town, not far from Santa Teresa, and Stintino is also beautiful. Alghero is probably the most beautiful city in Sardinia.
Beautiful beaches are everywhere. Check below:

I was on Sardinia last September and October and would make the same recommendations as Roberto. The area is beautiful and has gorgeous beaches and interesting historic sites. Definitely take an early morning ferry to Bonifacio and spend the day meandering through the town and taking a boat tour to see the calanques. The beaches at Capo Testa, just west of Santa Teresa are great!
