What time does your flight land? If before noon, can you make your way to Sorrento and spend your first three nights there? That allows you to consolidate all of your Rome nights at the end before flying out. Cuts down on one hotel change, anyway.

One night in Venice: a long trip from Naples for only one night. If you reorder your trip as follows, I think you can put in two nights in Venice (minimum amount to bother going). Skip the one night stays entirely.

  • Arrive Rome, transfer to Sorrento
  • 3 nights Sorrento
  • Transfer to Florence via Train 5 nights Tuscany farm stay
  • Drop off the car in Florence and transfer to Venice via train 2 nights Venice
  • Transfer to Rome via Train 4 nights Rome
  • Depart Rome

I agree with Laurel, Venice isn’t worth it just for one night as there’s so much to see and as it’s so unique, it shouldn’t be rushed. Personally, I wouldn’t bother just for 2 nights either as I would want at least 2 full days there. Definitely try to reduce the number of times that you change destinations.

Agree with Laurel and Jennifer about Venice.

On your first visit to Venice it's a bit difficult to figure out how to navigate whether on foot or by vaporetto. Just one night doesn't even give a full day with a lot of time used getting to/from Venice, getting the vaporettos, figuring out how long it takes to get places etc. If you can change to Laurel's suggestion that would be great. I assume your farm stay is booked and can't be changed, otherwise I'd add another night to Rome.
