Starting in November I would like to spend 3 months in Italy split between Florence and Sorrento. I am familiar with Airbnb, but are there other ways to find place to stay that offer a private room and kitchen facilities?

We use Vrbo extensively but you might also find www.sabbaticalhomes.com to be interesting. The latter is good for longer term stays. Assuming you know about limitations on how long you can stay in the Schengen Zone?

Look at EdenHouseSorrento.com, beautiful place, views of Naples Bay and Vesuvius and great location. Very nice landlords.

We have done a lot of extended stay and landlords deal directly with us not through VRBO or AirBnB, etc

If you're not an EU citizen, you need to be very, very careful about your timing. You are allowed only 90 days in the Schengen Zone (which includes Italy) within any 180-day period, not 3 months. And both your arrival day and your departure day count.
