Is Ferrara worth a side trip from Venice? The New Museum of Italian Judaism and the Shoah seems particularly worth a visit.

It is worth it if you say it is. It is a 1 1/2 hour ride on the hourly Regionale Veloce and cost 9.25 EUR each way, just a little more than a ride on a vaporetto.
We really enjoyed Ferrara - just a very pleasant town, mostly flat, not so heavily touristed, lots of bicyclists, great castle and other sights. But I wouldn't stint on Venice either.
I went to Ferrara last year and spent two nights there. The old town is flat, attractive, easily walkable, and very pleasant. I did not go to the museum you mentioned so I cannot comment about that. How many days do you have in Venice? Can you stop there on your way to another destination? I actually preferred Ferrara to Padua.
If you have an extra day to spare from Venice, by all means, go. It is very nice, easy to get around, has incredible food (very different from Venice). Nice change of pace. We went to Padua also, and were not impressed.
I really like Ferrara, and I agree that the new museum adds even more reason to visit. As long as it fits with the flow of your total trip, I'd do it.
