Ferragosto falls on Sunday, August 15th this year. Does anyone know if the Italians take their holiday on Monday instead? Just wondering if businesses will be open on August 16th.

They don't, like us in the UK, substitute a week day for holidays which fall on on a weekend. It is the height of the Italian holiday season and you will find that many small businesses in the towns and cities close for a couple of weeks over the period. The owners will have gone to the coast and countryside to escape the heat!
However, businesses catering to tourists will be open, it's often their busiest time of the year.

Off topic, but I highly recommend the Italian movie "Mid August Lunch" which centers around Ferragosto. CUTE!!!!
We were in Italy during August 2007 and staying at an agriturismo outside of Assisi. Ferragosto fell on a weekday (can't remember what day now) and we spent part of the day in Spello and found everything to be open here. Didn't venture too far that day as our agriturismo was having a bbq for all the guests starting in the early evening and we didn't want to miss this. Glad we didn't as it was fabulous!
