after landing in Rome Termini mid day on a Monday, how long to go through passport control/EES first time, and get to the Termini to take the high speed train to Naples?
Hi, I like to purchase my high speed train tickets ahead of time to save money. But, I don’t purchase the one ahead of time for my arrival date. There’s a lot of unknowns - delayed flight, amount of people at the airport, etc. I have been there when the Leonardo Express from the airport to Roma Centrale has been absolutely packed and difficult to take the first one, and other times when it’s easy to get a seat.
Is Rome your first flight, or will you be arriving in Amsterdam’s airport first? That makes a difference, too.

So you'll have done ess/passport control in Munich - nothing to do in Rome.
I'd look for a train to Naples two hours after you arrive in Rome.

I’m not sure 2 hours in necessarily enough even if you come from Munich. If you have luggage, there is also the unknown baggage claim issue, which in my experience is never too fast at FCO. Then from FCO you need to make it to Termini, then make a train change at Termini. There is a LE train every 15 min. then you have 35 min ride to Termini. Once at Termini the walk to the other train is not long, but more than 5 minutes at best. You then need to be aboard a few minutes before the doors closed. You could potentially need 1 hour from the moment you are aboard the Leonardo Express, to be safe. So booking a train two hours after the plane docks to the jetway will work only if all planets align, including there are no weather related or other flight delays.
Listen to Roberto. Two hours is way too tight. Even three might be a little tight. From the time your plane lands (assuming your plan is on time) to the train is a good hike and the same once you at Termini. I would count on a hour just for the train IF you just miss the train at the airport. In the past the train has used track 25 and it a good ten minute walk to the front of Termini and another 10, 15 minutes to the Naples platform.
You can buy your ticket to Naples at the airport ticket booth. Do so.
