We will be arriving in Rome late on a Friday evening & staying near the Roma Termini train station.
Are there any places to get a quick take-away meal in the area, such as pizza by the slice?
I think there is a McDonald's at the front end of the train station, but only as a desperate last resort.
All kinds of places out the side door plus a couple of local sandwiches places inside the station -- near McDonalds.

There are lots of food choices at Roma Termini! In addition to the previously mentioned McDonalds, there's a Roadhouse Grill right by the entrance, a Panini shop close to McD's, a Chef Express and of course the "Drugstore" one floor down that has lots of pre-packaged sandwiches, drinks, etc. I was just there a month or so ago, but can't recall if there's a Burger King as well.
I always enjoy sitting in the upstairs dining area of McDonald's and watching travellers of all kinds coming and going, the trains arriving and departing, etc.

Finding a place open late has never been a problem for me. Finding one open early, that's another story
If you don't find a non-McD place in Termini you like, then ask for a suggestion when you check into your hotel. The receptionist probably knows a great place closeby where they go for a quick meal or take-away.
if you are facing the station from the train tracks, out the right side of the station there are side streets with pizza by the slice places.
There's pizza around every turn, but my advice is to travel away from there just a bit to get a better price. And don't do McD's. We went there as a novelty, and it was one less fabulous Italian meal we didn't get to eat!
