Family Trip to Rome in February

We (2 adults, 2 kids aged 9 and 14) will be heading to Rome for 6 days in February.

Looking for advice on whether we should look for a hotel with a room that can accommodate all 4 of us, or if we should go the AirBnB route. Would love to hear recommendations for either option.

I know that 6 days is going to be a long time for Rome, we don't want to push the kids too hard with sightseeing every day though. So what an intrepid traveler could see in 2 or 3 days, we might need 4 at least.

We are considering a full day excursion to Pompeii and/or a trip to Ostia Antica, but we are happy to hear any other suggestions for day trips that people enjoyed.

Also looking for recommendations on a cooking class our whole family could participate in. Preferably something that offers a dish that isn't pasta, since my son prefers fish or meat. He would have a good time making the pasta, just not eating it (we would be sure it doesn't go to waste haha).

Pompeii is 2 1/2 hours away and the main train line drops you off at the opposite end of the Site from the entrance. Rick discusses this well in his guidebooks. Ostica Antica is very neat too, not quite as neat of course. but can be reached by Rome transit in much shorter time. If food preferences are an issue an AirBnB or an apartment would be preferable.
