We are planning to visit Ortisei in December to ski and are looking for a family friendly place to stay as well as guidance on things to do for non-skiers. Also, any can't miss restaurants?
Restaurant Tubledel is very good. Ortsei has a good Christmas Market in the center of town. Depending on when in December you go, early there will still be hiking on the Alpe di Siusi. You might have to go up the road to Selva to find snow covered runs. The Rifugio Emilio Comici is a not-to-miss mountain restaurant.
Hotel Grones in Ortisei is family run, a lovely place. They have a large indoor pool which your kids would enjoy and an excellent dining room.
We are wanting see other parts of Italy as well - our timeframe is Fri Dec 16th – Jan 1st. We could either start our trip in The Dolomites or end our trip there... we are flexible with that bit. Given we would want to do some skiing (and don't plan on getting a car) would it be recommended to stay in Selva and simply visit Ortisei? If so, any recommendations on great family friendly places to stay in Selva?
Snow is usually more likely the later in the month that you go. They make snow, of course, as well, but I am sure it is nice to have some natural snow. BUT, hotels get a lot more expensive starting Christmas Eve, so there is that factor.
We stayed here https://www.albionhotel.net/en/hotel-dolomites.html one Christmas for five nights and loved it. They have a shuttle to take you to the lifts and to town, on demand, and it is right on a bus line for your convenience in coming and going as well. (We did not have a car.) You will be given a bus pass by your hotel that will cover the local buses up and down the valley for the duration of your stay.
Note that most hotels are half-pension meaning you have breakfast and lunch included. They usually have cakes and coffee int eh afternoon as well.
Ortisei is the cutest village at Christmas. There is skiing available from all three villages.
I as there last in 2014 from Dec 11 to Dec 14. Skiing was open in Selva, and bus service is frequent. Ortisei was fully decorated for Christmas. As was said by Laurel, Christmas to New Years will be the most expensive time to stay in the mountains and you are liable to find that there is a 1-week minimum stay requirement. All of Europe will be on vacation and a lot of Europeans ski.

It’s just outside of the village noise and a five minute walk. The lifts for both Seceda and Alpe di Siusi are a few minutes walk. There is also a Children’s park on the way. Apartment 7 is the largest apartment and has the best views. It also has a clothes washer.
If the drought conditions are resolved by then, I would not worry about snow conditions, because the Dolomite ski areas largely run on artificial snow anyway. So I see no benefit in staying in Ortisei at the end of your trip (with hotels at their most expensive) instead of the beginning; many slopes should already be open the week before Christmas.
