We are scheduled for the RS Best of Sicily tour. The tour ends in the morning in Catania, but we do not fly out until the following day -- any suggestions on best use of that extra day?

Duomo and Elephant Fountain (same piazza). In the morning there is also the Piscaria next door, a typical fish market.
From Piazza Duomo walk up on Via Etnea (shopping) to the Roman Amphitheater. Visit the Amphitheater.
From there, walk further up on Via Etnea and find the Villa Bellini gardens. In front there is a famous Pasticceria (pastry shop) called Savia. Buy some goodies (arancini?), head to the villa, and relax in the park while eating your arancini or other pastries.
We might be on the same tour with you in Sicily. I would agree with Roberto's suggestions. We went to eastern Sicily on our own without a tour a few years ago so we saw Catania and the Duomo but not the Roman amphitheatre so Roberto now has given me ideas too, for the part of the RS tour when we are on our own.
