I think the Dolomites are too far for a day trip. I don't know what vineyard areas are near Venice.
I've stumbled upon a few companies that take day tours out to the Dolomites. They're a decent way away, that's why I was wondering if they were a worthwhile investment. None really had the free time to do any serious walking/hiking.
We love the Dolomites but I cannot imagine seeing the, only from a bus or a quick photo op stop. If you love mountainous regions and hiking, build a future trip around a longer stay. There’s tons to do in and around Venice somwnjoy that while you are there.

when will you be in venice and how many people? we did a private prosecco road tour with oriana. great tour guide and driver, speaks great english, for us 4 ladies from san francisco bay area, thru the vineyards and small villages, tasting lots of prosecco from small wineries and having lunch at restaurant she chose. kept in great contact thru email, the day of event we took train to susegana, she picked us up and off we went. she's born and raised in the area. if interested you can send her email [email protected] or [email protected] (tell her the bay area ladies say hello)

@Laurel -- I agree. The further I research it, the more I realize it may not be worth it.
@princess-pupule -- thank you for the link! I will check it out! The prosecco tour appeals to me a little more than the Dolomites, or at least what a one-day tour would offer. I'm originally from the Bay Area myself! I'd be traveling solo, like in summer.
One of the important judgment calls in Europe travel is sensing when a day trip will enhance your experience versus when a day trip will cross the line into not enhancing your experience.
