We are planning to go to Capri from Naples (in mid-October) for the day and then ferry to Sorrento for late afternoon and dinner. The latest train back seems to be at 7:20 pm. Any advice?

Plan on dinner in Naples. Or have reservations in Sorrento for a late lunch. Restaurants aren’t going to open in Sorrento until 7:00. Did you check the bus schedule?

This is normal for this area, not just off-season. Plus the sun sets earlier (boating.) The ferry ride is longer to Naples, but I would skip Sorrento. It's not "un-missable", although it's a nice enough purpose-built, postwar resort town, mostly masonry and concrete. Yes, "opinion." (Slept there 5 nights for daytripping.)
