My friend and I (in our 20s) are flying into Rome in a few weeks. We want to stay in Rome but then possibly go to Amalfi Coast or where ever the most recommendations would be. We need mid pricing, not too expensive, but nothing too cheap where we are not comfortable in our place. Our overall trip is for 6 nights. We want to see some historic sight but also do local shopping, good food (some tourist spots but ultimately the hidden gems of food) and fun nightlife. We are open to possibly taking food classes or wine tasting as well. We want to be able to experience as much of Italy as we can in these 6 nights that we are here. We also want to spend at least 2 days at the beaches or getting a boat day where we can swim in the water and still be able to explore the coast. We would love some recommendations for getting drinks during sunset as well as recommendations on day clubs.
You need more nights or a shorter wish list.
Presumably flying in/out of Rome? Is so, getting to/from Amalfi coast will eat up way too much of your limited time.
Your time is short and your wishlist is very long.
There are many beaches about an hour away from Rome - Santa Marinella and Santa Severa are two local favorites and these are both reachable by train. But if you don't already have reservations you're starting very late for finding places both in Rome and in the popular summer beach towns especially trying to stick to a budget.
I would jump on Booking.com and whatever other sites you like and start tracking down places to stay ASAP.
The Amalfi Coast is much too far away given the travel infrastructure and time for you to visit and most places there have been booked for months already.

I have to agree with Joe. If you only have 6 nights, and are flying in and out of Rome, you really don't have time for the AC. And trying to get suitable accommodations there at this late date? Good luck with that. Plus, the AC isn't known for its beaches, which are mostly pebbled.
Given the short amount of time, I'd go immediately to Florence by train after getting off the plane in Rome. Spend 2 or 3 nights there, with maybe a winery tour and/or a day trip to Siena. Then return to Rome for the rest of your trip. You'll get many of the things on your wish list, minus the beach and boat trip.
Perhaps you can give us some more details - You're landing on Day 1 and leaving on Day 7 or are you saying you have arrival and departure days separate from the 6 days? Is this all the time you're planning in Europe, so you'd have jet lag too?? Wait, I now see you're flying to Italy in 2 weeks - have you booked in & out of Rome? If that's the case, nothing I say below is really relevant, you can't get back to Rome in time to have spent any appreciable time in Naples....
If you fly into Rome & out of Naples, (multi-leg flight on same airline or same alliance) you could potentially spend 3 nights in Rome, take the train to Naples & stay in Sorrento (or Naples) so you could make an early flight out of Naples, provided you're wiling to take a taxi to airport, I wouldn't want to risk the local Circumvesuiana to day of departure. Sorrento is a cute town perched on cliffs overlooking the Bay of Naples & you could take a day trip by ferry down the Amalfi coast. The AC has poor transportation, you really wouldn't have time to spend the night
IN the AC, and get back to a major airport for departure. I'd look into where you actually want to go, please look beyond Instagram !(HA), at least go to the library together and look at some guidebooks, especially DK guides, to get a better idea of the areas.
I don't think day clubs or evening sunsets can be helpful until you do some research on where you want to spend your time. Have a look even at Google about trains - later you need to look at the trenitaliaapp, https://www.trenitalia.com/en.html, but for now just get an idea of transit time. Will you take a taxi from FCO airport to your Rome hotel? What part of Rome? The hotel location could add up to 30 minutes getting to the train station.... you see my point, do some planning to see what works best for you!

So you're leaving in a "few weeks" but don't have any accommodations or attractions booked? What, exactly, are your arrival and departure dates, and which airport in Italy are you departing from? 6 nights (if they don't include an overnight flight) = 5.5 days at most. So, do your 6 nights include an overnight flight from the your country (US?) to Rome?
What is "mid-pricing" for you?
You get the idea; we need a lot more info. That said, I don't see you having time for exploring Rome, getting to/from the Amalfi Coast; beach time, cooking classes/wine tasting; shopping; boat day, etc. I've no personal idea what a "day club" is or if there are such things on the coast or in Rome.
It doesn't sound like you've any great interest in Rome (?) so you might go directly to the coast and spend all your time there. If you are flying home from Rome or Naples, you'll want to be nearer the city the night before your flight.

You can do all of these things and more in Rome quite easily.
First and foremost right now is to get lodging booked. Use Airbnb if that’s your thing, or check booking.com- they list apartments.
If you don't have any accommodations booked yet for a trip in a few weeks your chances of finding something available and affordable are much greater in Rome than anywhere on the Amalfi Coast.
You will want Air Conditioning.
Stay in Trastevere if possible- young nightlife, lots of restaurants, shopping, cafes, and bars. Walking distance to major sights- if those interest you. You probably can’t get tix for Colosseum or Vatican, etc but you didn’t mention those.
Take a food tour rather than cooking class- that will include some hidden gems, wine tasting, local history/sights.
You can even watch the sunset over gorgeous Rome from the many roof top bars and terraces.
May I ask where you are coming from and why a "beach day" is important? Most folks don't go to Italy for the beaches, and on such a short trip you really don't have time to get to any worthwhile "beach" and still have time to enjoy Rome.
If you must see Amalfi Coast splurge on a day trip tour from Rome. It will be a long day on a bus but gets you there.
You just don’t have time to give it more and lodging is an issue.
Have you booked flights already- are you flying into and out of Rome? You need to be IN Rome night before departure if that is your departure city.
You could go straight to Naples area (Amalfi Coast or Sorrento) as soon as you land.
Spend 3 nights there (2 days)
Return to Rome and spend the last 3 nights there (2 full days)
Very short, very rushed, but that’s the only way you could do it in 6 nights.
