Best? Il Portico if you want the simplest Tuscan food without pretensions, Mangiando Mangiando if you are swayed by 'Slow Food' stickers, Ristorante da Verrazzno for the views (particularly of the proprietress's daughter)
Nerbone if you want a bit of drama. The food is best at....well, you won't get a bad meal at any of them.
