Friends tell us many places in Italy shut down for Easter Sunday & Monday. We'll be traveling south from Firenze by car on Easter Monday and are looking for activities & a place to stay overnight. Siena & Montepulciano are both under consideration. Thoughts?

I’m not sure what you mean by shut down. Easter Monday is when Italian families take a da trip to nearby tourist locations in droves. I’d be more worried about traffic and ability to find a free table at a restaurant for lunch than things shutting down.
I was in Florence during Easter about 20 years ago and had no problems finding things to do, including attending the Scoppio del Carro ceremony (Explosion of the Cart), which was wonderful to watch. There will be many festivals and markets open in Florence and other towns like Siena. Wherever you go, you should have no problem finding things to do.
That said, I would probably book a place in advance to be safe - the last thing you want to do is scramble for a room at the last minute.
