I am traveling to Lucca in Late May and wondered what the easiest way to travel to Lucca is? I do not want to rent a car.

There is a bus(Vaibus Line E1) that will take you from the Florence airport directly to Lucca.

Travel by train is the method I'd use. There are numerous departures from Firenze SMN to Lucca, and the easiest trips will be direct (no changes). You'll need to know the station names in Italian when buying tickets. I normally buy tickets at the automated Kiosks, which are very easy to use. You can see all the rail solutions on the Trenitalia website.
For example, there's a direct departure at 09:10, arriving 10:29. Most of the trains on that route are Regionale trains so you MUST validate your ticket prior to boarding the train on the day of travel, or risk a hefty fine which will be collected on the spot!
When you arrive in Lucca, it's a short walk from the station to the gates through the walls of the city (maybe 10 minutes or so). Are you going there for a day trip, or to stay for a few days?
