We are going on a tour of Naples/Amalfi in late May. We arrive at 7am Naples time and can’t check into our hotel until 1 p.m. Likely after airport customs and travel time we won’t arrive at our hotel until closer to 9. We have been told we can leave our luggage and go explore - what is usually open that early and what do you suggest we see/do/eat to kill time before we meet with our tour group?

Then you can eat at a restaurant for lunch. Naples has many delicacies, but obviously it is most famous for Pizza.

Thanks. We will be doing pizza for dinner with the tour group that night - we would probably want to stick with something in walking distance? I need to do more research on public transportation and taxis/uber in the area too. I just wasn’t sure if there would be a lot open early. Thanks.
Why not try the Rick Steves audio tour? (Download before you go--really pay attention, before you go--onto your phone.) If you aren't familiar with it, see the Watch, Read, Listen section of this website, and below that, select Audio Tours. It will give you a head start on orientation, and if you see somewhere you want to stop instead of continuing on the tour route, that will be fine too. Maybe you will see a place to sample distinctive Naples pastries.
No real Uber in Italy - taxis are fine - but Naples also has metro and bus. You don't say where your hotel is so I'm not sure what is within walking distance but Naples is a large city. Rick has suggested walking tours of Naples - or maybe another self guided tour - if you want to use one of those and see what might not be on your booked tour and just explore. It's probably on your tour but if not take the metro to Dante and explore the piazza and wander down to Chiesa del Gesu Nuovo as a start to explore if nothing else.
I would just plan carefully about what you want to drop at the hotel and take with you so when you get there you can simply walk out with what you need for the partial day about town and have that on you. This will save you trying to sort through your luggage at the hotel. If you want a taxi I'm sure the hotel will call one for you if you know where you want to go.
Note: The best sfogliatelle in the world is 5 minutes from the Naples train station. Antico Forno delle Sfogliatelle Calde Fratelli Attanasio Vico at Ferrovia 1/2/3/4. Walk over, show up, grab a number right away and wait your turn.
So worth it.

Where are you staying? Where do you meet your tour group?
If you're arriving from North America, potentially jetlagged, the best thing to do would be to walk around outdoors.
Naples has many lovely churches and religious complexes. I think most churches will all be open at by 9 AM (if not earlier), though I suppose some might be conducting mass--not an appropriate time for a tourist visit.
Here are some places that were opening at 9 AM in early 2023; check their websites for current opening days and times:
Archaeological Museum: Large museum located near a Metro station. Closed Tuesday.
Capella Sansevero (The Veiled Christ): Must prebook; it sells out well in advance. A downhill walk from the Archaeological Museum. Closed Tuesday
Palazzo Reale: Closed Wednesday.
Capodimonte: Large art museum well north of the center. Take some form of transportation; it is uphill, and the shortest route involves 130 steps. Opens at 8:30 AM. Closed Wednesday.
Thank you all so much. Our hotel is down near the water. Yes we are arriving from Norrh America so I am hoping I am able to get some sleep on the plane. Our trip last fall to Copenhagen, I didn’t feel “right” from the jet lag for 2-3 days even though we followed the rules and stayed up til a normal bedtime for the time zone. We are meeting our tour group at our hotel in mid-afternoon for a drink followed by dinner. The next morning we tour the historic city center and Naples underground. Thank you for the food rec!
