I'm wondering what time do tours typically begin and end for the day? Specifically the Italy tours.

Are you referring to the Rick Steves tours? In my experience, the starting time each day varies a bit, as does the ending time. There are usually some free afternoons and a free day on most tours.
Your best bet for accurate information would be to contact the RS tour department, as they will be able to provide accurate information for the tours you're considering.
