Can anyone recommend 1 or 2 coastal towns worth stopping at to break up the drive?

Maratea and Tropea, both on the coast. Paestum is close to Salerno, you may want more of a drive before you stop.

Capo d'Orlando (province of Messina), near the Aeolian Islands and 40 minutes far from Cefalù.

Capo d'Orlando is beautiful but it is in Sicilia, after the ferry crossing.
