Dolomites mid-June?

Steves' guide says many places in the Dolomites aren't open til July and that the hikes will be under snow. I realize this is the mountains and it all depends on snow levels, but what is the reality of pension availability and hikes mid June?
We are not mtn climbers w/ ropes, just hikers and would like to stay at a few refugios as well.
Also, any recs for places to stay and which hikes to do?

You must plan your itin carefully for the dolomites as it is a large area to cover on foot. I would reserve all lodging in advance to be safe. Stunningly beautiful, enjoy!

Some, but not all, of the lifts will be open. Same with the trails---there could be some lingering snow in the higher and shadier areas, but mostly it should be OK unless they had a very heavy snow year.

As for rifugios, the Rifugio Bolzano is open from mid-June:

This is a lovely hike from the base area on Alpe di Siusi, described in Rick's Italy book.

For accommodations, you could stay in Castelrotto, or one of the towns closer to Alpe di Siusei or in Val Gardena, where you'll have the widest choice of places. Most should be open in June but the prices will be lower than in high season.
