I'm looking at doing a bicycle tour of the Dolomites region next September. I'm wondering if hotel rooms are open enough in September for me to do a seat of the pants trip. Ride, find myself wherever at the end of the day, and then look for a room?? I love the flexibility of pedaling wherever the road leads and not having a planned out route. Don't so much love not finding a place to sleep. Any thoughts appreciated.

The season lasts through September generally.
We were recently in the area three weeks ago . While not mobbed , there were a fair number of visitors . With changing demographics , ( lots more , long in the tooth ) finding a last minute room might prove more costly than you anticipate . The hoteliers are better able to judge business flow and pricing than you are . Keep in mind that most of the hotels in the Dolomites cater to a somewhat resort crowd rather than one night drop ins , and that could put you at a disadvantage . In my mind , you would do better to book ahead , based on how many kilometers you could reasonably cover in a day ,and take out the uncertainty factor .
We have been in the Val Gardena in Sept 2017 and 2018 and it was not crazy-busy. Could you get a room on demand? Probably but at a premium. I would say you should look ahead at least one or two days and decide where you will end up, booking a room at least 24 hours in advance. Many places are used to 3 night minimums so you might pay a surcharge for a one night stay. ( We did so for an impromptu night in the Alpe di Siusi.) Sept is a gorgeous time to be there!
Sept would be very risky.
All hotels are definitely open in Sept. I went mid to late Sept a couple of years ago and don't recall seeing any that were closed at that time.
As also mentioned some of them have multiple night minimums, not only the resort luxury places but also the smaller B&B type places can have minimum stays ; so showing up and finding a room just for 1 night would be risky and/or extremely costly.
