Several places are shut down May 2 to May 7 wondering where some good places would be to stay to photograph in the dolomites. I’d like to make one place maybe two max places my base of operation and get up to do early morning sunrise and sunsets.

Ortesei should have some options—-did you look there?
One problem anywhere in the Dolomites in early May is that the lifts may not all be running, and even if they are, they do not start in time for sunrise nor run late enough for sunset. So your photography might be limited to sites you can walk to in town.
