They do a guided bike tour out of Florence that is reasonably priced and looks like fun. Is this a super touristy thing to do?

I have never heard of your company. We did a bike tour with DuVine Adventures in Tuscany - and it was great. Not touristy at all - then we spent time in Tuscany.
