I will be in Italy from the end of the December through the first week of January in 2018. Does anyone know if the trains run on New Year's Day? I plan to travel from Venice to Rome January 1st 2018.

Of course they run, but on the reduced Sunday schedule. Check either www.trenitalia.com/tcom-en or www.italotreno.it/en in early November entering 1/1/2018 as departure date and an hour of departure like 6 or 7.
You have to use italian names on both sites: Venezia S. Lucia (if you're staying on the islands) and Roma Termini (if you are staying in central Rome).
Both companies run some direct bullet trains on that route, many more with a change in Bologna.
