We have one night in Italy and want a really nice meal. Any good recommendations for Verona?

The fanciest restaurant in town is Ristorante Maffei - and Im sure the food is good but very upscale which is honestly not really Italian. But it is a lot of pressure to pick a single experience dining experience. Verona has a very traditional food scene combined with more progressive places.
Places I've heard referred to most often: Locanda 4 Cuochi, L'Evangelista Ristorante & Enoteca.
One the the co-authors of Rick's Italy food book lists Trattoria Al Bersagliere as one of his favorite resturants. Rating on-line is a little below some of the other mentioned restaurants and I never made it over there so I don't have an opinion.
But if you ask locals they will probably point you to something in their neighborhood. One of my favorite places is Caffè Monte Baldo but that is just one of those places in a neighborhood.
Also Osteria Ponte Pietra has an amazing setting and look that will make you want to book a table but the locals won't eat there.

I second Trattoria Al Pompiere.
We were in Verona in December 2024 and had a really nice lunch at Osteria Sgarzarie, not far from Piazza Delle Erbe.
I also enjoyed Caffè Monte Baldo.
Their risotto made with Amarone wine was amazing!
