Anywhere you choose to dine, he can tell them "Mi serve una dieta iposodica per favore." (I need a low-sodium diet, please.) Perhaps have this printed on a card you can show the server in case of misunderstanding. We have found restaurants in Itlay to be very accommodating with special needs whether dairy, gluten, sodium, or other restrictions.
