December Restaurant Reservations

Hi all, I'm traveling to Italy (first timer) this December from 15-30, and will be in Venice > Tuscany > Rome. Last leg of trip including Christmas Eve will be spent in Rome. Am I correct in assuming that the only days I'll need to make restaurant reservations will be December 24-26? Can the other days be walk-in or day-before reservations?

Edit: it will just be me and my husband and Tuscany : Siena and Florence

December 24 dinner and Christmas at lunch are particularly busy for restaurants, so you definitely need reservations for those two occasions. December 26 is a holiday (St. Stephen’s day) so that lunch might be busy too. All others you should be able to get in even without. However how many people are in your party? If it’s only you or maybe a couple they will be able to sit you almost anywhere (maybe anfter a short wait) except for Christmas and Christmas Eve at dinner.
